Linda's Tomato Pie
1 refrigerated pie crust
4 - 8 sliced tomatoes to fill
pie shell FULL!
1 c. shredded cheddar cheese
1 c. shredded mozzarella cheese
1 c. mayonnaise
3 sliced green onions (tops,
too)
basil - FRESH is best
Slice tomatoes; salt and pepper
for taste. Drain them on paper towels at least 1 hour. Bake pie
crust at 350 F 10 - 12 minutes. Remove from oven and cover bottom
liberally with shredded mozzarella to prevent sogginess. Mix
remaining cheeses and mayo. When crust is cool, layer drained,
sliced tomatoes, adding onions and basil to each layer (use
sparingly - you won't need a lot on each layer). Continue layering
tomatoes, onions and basil until mounded like an apple pie. Spread
cheese and mayo mix over top like a meringue. Bake 35 minutes at 350
F. This is excellent on its own with a salad or served as a side
dish with any meal. |

Zucchini Pie
3 c. diced zucchini - skins ON
1 small onion, chopped
1 c. Bisquick
1/2 c. oil
1/4 parmesan cheese
1 t. parsley flakes
1/2 t. each salt and pepper
4 slightly beaten eggs
Mix all ingredients together. Pour into a greased
10" pie plate. Bake at 350 degrees 25 - 30 minutes.
