Blueberry Soup
1 1/2 c. water
1/2 c. sugar
1 cinnamon stick
2 t. cornstarch
1/4 c. water
1 6-oz. can frozen lemonade
1 qt. buttermilk
1 qt. or more blueberries
1 c. blueberry yogurt
Boil water with sugar and cinnamon stick until sugar is dissolved.
Mix cornstarch with 1/4 c. water and stir into mixture. Stir ’til
clear. Remove from heat and add the frozen lemonade, buttermilk, and
blueberries. Smash some of the blueberries with the back of your
spoon so the color is released. Stir in yogurt. Remove cinnamon
stick and blend. Serve topped with whipped cream and a mint leaf or
orange slice.

2 cans stewed tomatoes (I use 2 quarts of home canned tomato juice
or whole tomatoes)
1 medium/large onion or a similar quantity of green onions
1 large can NO FAT beef broth (or 4 - 5 cups reconstituted bouillon)
1 envelope chicken noodle soup mix (I substitute couscous or rice,
then added extra bouillon)
1 bunch of celery
2 cans of green beans (1 quart home canned beans or 1 package frozen
beans)
2 lbs. carrots (peeled)
2 green peppers
Cut veggies into medium pieces. Add seasonings to taste - salt,
pepper, hot sauce, herbs, Worcestershire sauce, etc. Cover with
water and boil fast for 10 minutes. Reduce to simmer until veggies
are tender.

Barbecue Sauce
1 1/2 c. peach
OR apricot jam
1/2 c. soy
sauce
1/4 c. cider
vinegar
2 cloves
garlic, minced
1 chunk fresh
ginger - about 1" long, peeled and chopped
1 T. sliced
jalapeno peppers
Blend all
ingredients in blender until smooth. Simmer baby
back ribs with a quartered apple for about one hour.
Cook ribs on grill, basting and turning often, until
the sauce is set - about 15 minutes. Sauce is great
with chicken or chops, too! (Refrigerated sauce will
keep well for a fairly long time.)
